Where science meets the still

Most rum brands start with a tanker of imported Caribbean distillate. We start with raw cane sugar, Dartmoor spring water, and an obsessive commitment to doing things properly. Three Towns Distillery is one of only a handful of producers in England making rum entirely from scratch — and proud of it.

Our distiller brings the rigour of a physicist and the instinct of a chef to every batch. Fermentation runs can last up to 26 days, shaped by temperature, humidity and the particular character of that yeast batch. Nothing is rushed. Nothing is approximated. The result is a spirit with genuine depth and a provenance that no blended brand can match.

Plymouth is the right place for this. A port city shaped by centuries of maritime trade, naval history and West Country ingenuity — the three historic towns of Plymouth, Devonport and Stonehouse united in 1914 into a city that has always looked outward, always set sail for something greater.

Exceptionally soft, single-source spring water from Dartmoor. Its near-neutral mineral profile creates a blank canvas for fermentation and distillation — letting the character of the sugars, the yeast and the still speak without interference. A deliberate technical choice as much as a provenance one.

While most English rum producers begin with someone else's distillate, we begin at the very start — selecting raw sugars, building our wash, fermenting with care, distilling on our own stills, and crafting the final spirit entirely in-house. It takes longer. It demands more. And the difference is unmistakable in the glass.

Ingredient Selection
Rapadura from Paraguay, raw cane sugar from Brazil, and molasses are chosen batch by batch for their individual flavour contribution and fermentation characteristics.

Wash Building
Our sugars and molasses are combined with Dartmoor spring water — exceptionally soft and near-neutral in mineral content. This creates a pure, blank canvas that allows the character of the raw ingredients and fermentation to develop without interference from the water profile.

Fermentation
We ferment using commercial-grade rum distilling yeast. Each run is monitored and allowed to develop on its own terms — up to 26 days — responding to temperature, humidity and the yeast itself.

Pot Distillation
The fermented wash first passes through our pot still — the traditional heart of artisan distilling. The pot retains congeners and character, building the rich, complex base of our spirit.
